Chicken, Broccoli And Cheese Casserole
- 1 fryer, boiled and deboned (save broth)
- 1 (16 oz.) pkg. Cheddar cheese, grated
- 2 (10 oz.) pkg. broccoli
- 2 boxes Uncle Ben's broccoli-rice-au gratin
- 1 pkg. crackers, crushed
- 2 cans cream of mushroom soup
- 1 c. mayonnaise
- 3 Tbsp. butter
- Cut up chicken.
- Boil and debone.
- Set aside.
- Steam broccoli; set aside.
- Cook Uncle Ben's broccoli-rice-au gratin in chicken broth according to instructions on package.
- Mix rice, broccoli and chicken together.
- Add a little grated cheese and stir.
- Pour mixture in buttered casserole dish and spread out.
- Spread grated cheese on top of mixture.
- Mix 2 cans of soup with 1 cup mayonnaise and stir.
- Spread on top of cheese.
- Crush cracker crumbs and mix with 3 tablespoons butter and stir.
- Spread on top of soup.
- Bake at 350u0b0 for 20 to 30 minutes or until cracker crumbs are browned.
