Easter Breakfast Quiche
- 2 Tbsp. butter
- 2 Tbsp. flour
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 2 c. milk
- 1 c. shredded American cheese
- 1 1/2 c. diced ham
- 1/4 c. chopped green onions
- 3 Tbsp. butter
- 12 beaten eggs
- 1 (3 oz.) can mushroom pieces
- 1 1/4 c. bread crumbs
- 3 Tbsp. butter, melted
- dash of paprika
- Melt 2 tablespoons butter.
- Blend in flour, salt and pepper. Add milk.
- Cook and stir until bubbly.
- Stir in cheese until melted.
- In skillet, cook ham and onions in 3 tablespoons butter until onions are tender.
- Add eggs and scramble until set.
- Fold mushrooms and cooked eggs into white sauce.
- Put into a 9 x 13-inch pan.
- Combine melted butter, crumbles and paprika. Sprinkle on top of eggs.
- Cover and chill overnight until 30 minutes before serving.
- Bake, uncovered, for 30 minutes at 350u0b0. Yields 12 servings.
