Psari Athos(Monk'S Mackerel)
- 4 mackerel (about 3/4 lb. each)
- 2 small onions, chopped
- 3 Tbsp. olive oil
- 2 bay leaves, crushed
- juice of 1 lemon
- freshly ground pepper to taste
- 1/2 tsp. salt
- 1 tsp. dried oregano
- 1/2 tsp. dried mint leaves
- 12 pitted Greek olives
- Have mackerel split and cleaned and have heads and tails removed, if desired.
- Rinse fish with cold water and dry well. Saute onions lightly in 1 tablespoon olive oil for about 5 minutes.
- Coat flat baking dish with oil and arrange fish in one layer so it will cook evenly.
- Cover fish with onions, remaining oil, herbs, seasoning and lemon juice.
- Top with olives.
- Cover dish with double layer of foil.
- Bake in a 375u0b0 oven for about 1/2 hour or until fish flakes.
- Serve with plain boiled potatoes. Makes 4 servings.
