Psari Athos(Monk'S Mackerel)

  1. Have mackerel split and cleaned and have heads and tails removed, if desired.
  2. Rinse fish with cold water and dry well. Saute onions lightly in 1 tablespoon olive oil for about 5 minutes.
  3. Coat flat baking dish with oil and arrange fish in one layer so it will cook evenly.
  4. Cover fish with onions, remaining oil, herbs, seasoning and lemon juice.
  5. Top with olives.
  6. Cover dish with double layer of foil.
  7. Bake in a 375u0b0 oven for about 1/2 hour or until fish flakes.
  8. Serve with plain boiled potatoes. Makes 4 servings.
