Fruit Cake, Kentucky Bourbon
- 1 1/2 c. butter, softened
- 2 c. sugar
- 6 eggs
- 1/2 c. molasses
- 4 c. flour
- 1 heaping tsp. baking powder
- 2 tsp. nutmeg
- 1 lb. raisins
- 1 c. chopped candied pineapple
- 1 c. chopped candied cherries
- 1 c. orange marmalade
- 2 lb. chopped pecans
- 1 c. bourbon
- apple slices
- Cream the butter and sugar; add eggs one at a time.
- Combine dry ingredients together.
- Mix fruit, marmalade and nuts in a large bowl.
- Add 1 cup of dry ingredients to egg and sugar mix, alternating with bourbon.
- Stir in fruit mix.
- Bake in greased and papered 10-inch pan at 250u0b0 for 2 1/2 to 3 hours.
- Cool.
- Wrap in cloth dampened with bourbon.
- Place in airtight container along with apple slices.
- Allow cake to ripen before cutting, about 1 month.
- Yields 8 pounds.
