Italian Style Swiss Steak(Makes 4 Servings)
- 15 oz. lean boneless top round of beef, cut into 4 equal pieces
- 1 Tbsp. plus 1 tsp. vegetable oil
- 2 c. sliced mushrooms
- 1/2 c. sliced onion
- 1/2 c. sliced carrot
- 1/4 c. sliced celery
- 1 c. tomato sauce
- 1/4 c. dry red wine
- 1/2 tsp. dried oregano
- 1/2 tsp. garlic powder
- 1/4 tsp. salt
- 1/4 tsp. freshly ground black pepper
- 1 c. sliced green bell pepper
- 10 oz. sliced all-purpose potatoes
- Preheat broiler.
- Broil beef on rack 4-inches from heat 2 minutes on each side.
- Set aside.
- In large nonstick skillet, heat oil.
- Add mushrooms, onions, carrot and celery; cook over medium heat until onions are translucent, about 2 minutes.
- Stir in tomato sauce, wine, oregano, garlic powder, pepper, salt and 1 cup water.
- Return meat to skillet.
- Cover and simmer over low heat 1 hour.
- Add green pepper and potatoes.
- Simmer until meat is tender, about 35 minutes.
