Earl Gray Olive Oil Cake

  1. Steep 4 tea bags in olive oil in a small pot on low heat until fragrant(about 10 minutes). Strain and set aside to cool to room temperature.
  2. Grind up 4 tea bags in a spice grinder and steep in warm milk for 5 minutes. Do not strain the ground tea out.
  3. Whisk together all dry ingredients.
  4. Whisk together all wet ingredients in a separate bowl and add to dry ingredients. Mix until just combined.
  5. Put the batter into the cake pan and bake 45 minutes to an hour or until cake is browned and springs back when lightly pressed with your finger.
  6. Cool to room temperature before enjoying!
