Healthy Cakes(Muffins)
- 2 c. oat bran
- 1 c. whole wheat flour
- 1 c. white flour
- 1 c. oatmeal or bran
- 1 c. raisins or other dried fruit (to stay fat-free don't use nuts)
- 2 heaping tsp. baking soda
- 2 heaping tsp. baking powder
- spices as desired: cloves, cinnamon, ginger, nutmeg
- vanilla (optional)
- 2 1/2 c. acid liquid (skim milk with tsp. vinegar or orange juice, apple juice or any combo)
- 1/3 c. honey or maple syrup or molasses
- 2 egg whites or Egg Beaters (for fat-free; 1 egg, if not)
- fruit (bananas, cored and sectioned apples with skin on, nectarines, etc.) or 2 c. pumpkin or grated zucchini and carrot
- In a large bowl, mix together oat bran, wheat flour, white flour, oatmeal or bran, raisins, baking soda and baking powder. Add spices as desired.
- If using vanilla, add to blender.
