Chipotle Lime Zucchini Crisps

  1. Preheat oven to 250F
  2. Using a Japanese mandoline, vegetable slicer, or large knife, slice the zucchini into 1/8-inch slices and transfer to a baking sheet
  3. Coat with a layer of olive oil spray on both sides
  4. Combine the lime zest, chipotle, garlic salt and pepper in a small bowl, mix well and sprinkle over the zucchini slices
  5. Set the slices on a baking sheet in a single layer and bake for 1 hour 10 minutes, turning once
  6. Remove from oven and cool on the baking sheet, then serve immediately or transfer to an airtight container and store at room temperature for up to 3 days
