Beef Enchiladas
- 1 lb ground or shredded beef
- 1 medium onion, chopped
- 2 tsp chili powder
- 1 tsp salt
- 2 Tbsp fat (optional)
- 1/2 lb American or Longhorn cheddar cheese, grated
- 12-8 inch corn or flour tortillas
- 1 medium onion, chopped
- 2 cups Enchilada sauce
- 2 cups tomato sauce
- 2 cups water
- 4 tsp dried minced onions
- 2 beef bouillon cubes
- 1/2 tsp salt
- 1/2 tsp garlic powder
- 1 tsp chili powder
- Mix ingredients and simmer for 5 minutes. Cook beef in fat. Add onion, chili powder and salt. Soften tortillas by dipping one at a time in hot Enchilada sauce. Spoon on filling. Roll, then arrange in shallow baking dish with seam side down. Pour on remaining sauce. Sprinkle with onion and cheese. Heat at 350u0b0 for 15-20 minutes until cheese melts.
