Pilau De Camarones (Braised Rice With Shrimp And Tomatoes)(Dominican Republic)
- 6 strips bacon, cut crosswise into 1/2-inch pieces
- 1 1/2 lb. raw shrimp
- 2 Tbsp. finely chopped hot chilies
- 1 Tbsp. finely chopped garlic
- 2 c. uncooked long grain white rice
- 9 medium size, firm, ripe tomatoes, peeled, seeded and finely chopped
- 2 tsp. salt
- freshly ground black pepper
- 2 Tbsp. finely chopped, fresh parsley
- freshly grated imported Parmesan cheese
- 3 c. chicken stock (fresh or canned)
