Middle Eastern-Style Summer Salad
- Salad Ingredients
- 3 cups cooked barley
- 3 large tomatoes, red or yellow, diced
- 1 bunch cilantro, chopped
- 1/3 cup raisins
- 1/4 cup pistachios
- 1/4 cup diced kalamata olives
- 1/2 preserved lemon, diced (or 1/4 cup caper berries)
- 1 bunch chilled blanched asparagus, cut into 2 inch pieces
- 2 cups garbanzo beans, drained
- Vinaigrette Ingredients
- 1/3 cup cold-pressed extra virgin olive oil
- 2 tablespoons red wine vinegar
- 2 cloves garlic, pressed or minced
- 1/4 cup za'atar spice
- Whisk vinaigrette ingredients until emulsified.
- Combine salad ingredients in large bowl.
- Pour vinaigrette over salad, and stir until combined. Add salt and pepper to taste.
