Pumpkin Cookies

  1. Preheat oven to 350u0b0.
  2. Combine flour, oats, baking soda, salt and cinnamon; set aside.
  3. Cream margarine.
  4. Gradually add sugars, beating until light and fluffy.
  5. Add egg and vanilla; mix well. Alternate dry ingredients and pumpkin, mixing well after each addition.
  6. Stir in chocolate chips.
  7. Drop 1/4 cup dough onto lightly greased cookie sheet, spreading pumpkin shapes with spatula.
  8. Bake for 20 to 25 minutes.
  9. Cookies should be firm and light brown.
  10. Makes 32 cookies.
