Chicken With Rice And Raisins
- 1 (3 lb.) frying chicken, cut up
- 3 Tbsp. vegetable oil
- 1 medium onion, chopped
- 1 c. uncooked rice
- 1/2 c. seedless raisins
- 1/2 tsp. garlic salt
- 1/2 tsp. seasoned salt
- 1/2 tsp. oregano
- 1 tsp. paprika
- 2 Tbsp. butter or margarine
- 1 (1 lb.) can stewed tomatoes
- 2 Tbsp. chicken stock base
- 1 1/2 c. water
- Brown chicken on all sides in hot oil.
- Remove chicken.
- Add onion to drippings; brown lightly.
- Add remaining ingredients; mix well.
- Put chicken in 2-quart casserole dish.
- Top with tomato-rice mixture.
- Cover and bake in hot oven (400u0b0) for about 45 minutes, stirring occasionally and adding water if necessary. Makes 4 servings.
