Blueberry Delight
- 22 graham crackers, rolled fine
- 1/2 c. powdered sugar
- 1/4 lb. butter, melted
- 1 (8 oz.) pkg. cream cheese
- 2 large eggs or 3 small
- 1 c. sugar
- 1 Tbsp. lemon juice
- 1 can blueberry pie mix
- 1 Tbsp. fresh lemon juice
- Mix cracker crumbs and sugar well.
- Pour melted butter over sugar and cracker mixture and mix well.
- Pat this mixture in bottom of 8 x 11-inch Pyrex dish.
- Mix in large mixing bowl, cream cheese (use 12 ounces if you like more cheese), eggs, sugar and lemon juice.
- Mix about 5 minutes (high speed) and pour mixture over crumb crust.
- Place in a preheated 350u0b0 oven and bake for 20 minutes.
- After 20 minutes, remove from oven and let cool thoroughly.
- Take 1 can of blueberry pie filling and 1 tablespoon of fresh lemon juice and spread over cooled mixture.
- Top with pint of whipped cream or Cool Whip.
- Decorate as desired.
- This can be made with fresh blueberries during season.
- Strawberry Delight is good too!
