Chicken, Broccoli And Rice Casserole
- 6 chicken breasts, cooked and cut into small pieces
- 2 (10 oz.) pkg. frozen broccoli, thawed
- 2 cans cream of mushroom soup
- 1 c. mayonnaise
- 1 Tbsp. lemon juice
- salt and pepper to taste
- 1 c. mild cheese, grated
- 1 c. chopped celery
- 1/2 c. chopped onion, sauteed in 2 Tbsp. butter
- 3 c. cooked rice
- 1 or 2 Tbsp. Tabasco sauce
- 1 can water chestnuts, chopped
- In a large boiler, saute onion and celery in butter, then add soup.
- Remove from heat.
- Add remaining ingredients except cheese and mix thoroughly.
- Place in casserole dish.
- Add broth if too dry.
- Add grated cheese on top after casserole bubbles.
- Can substitute shrimp for chicken.
