Peach, Plum And Apricot Cobbler
- Fruit filling
- 6 peaches
- 4 plums
- 8 apricots
- 1/2 cup sugar
- 2 tablespoons flour
- 1/4 teaspoon salt
- Topping
- 1/2 cup flour
- 3/4 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup butter
- 1/2 cup sugar
- 100 grams almonds, ground
- 3 eggs
- Cut peaches, plums and apricots into large pieces. Transfer to a baking dish and toss with 1/2 cup sugar, 2 tbsp flour and 1/4 tsp salt. Set aside.
- Preheat oven to 350u0b0F. Whisk 1/2 cup flour, 3/4 tbsp baking powder and 1/4 tsp salt in a medium bowl. Set aside.
- Using an electric mixer, beat 1/2 cup butter and 1/2 cup sugar until light and fluffy. Add ground almonds. Add eggs one at a time, beating to blend after each.
- Mix in dry ingredients.
- Drop batter over fruit using a spoon. Bake until topping is golden brown, 50-60 minutes.
- Let cobbler sit at least 20 minutes before serving.
