Lime & White Chocolate Olive Oil Cookies

  1. Preheat oven to 350. Line 2 cookie sheets with parchment.
  2. Mix until blended the oil, zest and sugars. Blend in eggs.
  3. In a separate bowl, stir together flour, salt and soda. Add to wet ingredients and mix until just combined.
  4. Stir in chocolate.
  5. Drop on prepared cookie sheets in balls the size of an egg yolk.
  6. Bake for 12 minutes (rotating halfway) or until edges are just turning golden and cookies are puffed up and crackling on top. Cool on wire rack.
