Sweet Vidalia Onion Scallops

  1. Peel and slice onions; melt 1/4 cup butter in skillet.
  2. Add onions and green peppers together and cook until tender.
  3. Stir in pimentos.
  4. Place half of onion mix in shallow baking dish. Sprinkle 1/2 cup cheese and 1/2 cup cracker crumbs.
  5. Repeat layers of onions and cheese.
  6. Beat eggs with light cream, salt and pepper. Pour over onions.
  7. Combine remaining cracker crumbs with 2 tablespoons melted butter.
  8. Sprinkle over top.
  9. Bake at 350u0b0 for 25 minutes or until set.
