Sweet Vidalia Onion Scallops
- 3 medium Vidalia onions
- 2 eggs
- 1/4 c. chopped green peppers
- 2 Tbsp. chopped pimentos
- 1 c. grated Swiss cheese
- 1 c. cracker crumbs
- 1/4 c. butter
- 3/4 c. light cream
- 1 tsp. salt
- 1/2 tsp. white pepper
- 2 Tbsp. butter, melted
- Peel and slice onions; melt 1/4 cup butter in skillet.
- Add onions and green peppers together and cook until tender.
- Stir in pimentos.
- Place half of onion mix in shallow baking dish. Sprinkle 1/2 cup cheese and 1/2 cup cracker crumbs.
- Repeat layers of onions and cheese.
- Beat eggs with light cream, salt and pepper. Pour over onions.
- Combine remaining cracker crumbs with 2 tablespoons melted butter.
- Sprinkle over top.
- Bake at 350u0b0 for 25 minutes or until set.
