Spanish Salad With Apple-Onion Vinaigrette

  1. Remove stems from spinach, wash leaves thoroughly and pat dry. Set aside.
  2. Combine sugar and next 4 ingredients, stirring with a wire whisk.
  3. Gradually add oil, whisking rapidly until thoroughly blended.
  4. Stir in chopped apple.
  5. Stack several spinach leaves together; roll tightly.
  6. Slice at 1/4 inch intervals, forming "ribbons."
  7. Repeat with remaining leaves.
  8. Arrange spinach on individual plates.
  9. Drizzle with dressing.
  10. Garnish, if desired.
