Crustless Coconut Custard Pie
- 2 c. milk
- 3/4 c. sugar
- 1/2 c. Bisquick
- 4 eggs
- 1/4 c. melted margarine
- 1 1/2 tsp. vanilla
- 1/2 tsp. coconut flavoring
- shredded coconut
- Mix together milk, sugar, Bisquick and eggs.
- Pour into a blender and blend for 2 minutes.
- Add margarine, vanilla and coconut flavoring.
- Blend for 2 more minutes.
- Pour mixture into a 9-inch greased and floured pie dish.
- Let stand 5 minutes; sprinkle with coconut, a cup or so.
- Affix a foil collar, about 2 inches wide around pie dish, covering all but center of pie to prevent overbrowning.
- Remove collar the last 10 minutes of baking if pie isn't a lovely golden brown.
- Bake in preheated oven at 350u0b0 for approximately 40 minutes or until the center is set and golden brown.
- Serve warm or cold.
