Crustless Coconut Custard Pie

  1. Mix together milk, sugar, Bisquick and eggs.
  2. Pour into a blender and blend for 2 minutes.
  3. Add margarine, vanilla and coconut flavoring.
  4. Blend for 2 more minutes.
  5. Pour mixture into a 9-inch greased and floured pie dish.
  6. Let stand 5 minutes; sprinkle with coconut, a cup or so.
  7. Affix a foil collar, about 2 inches wide around pie dish, covering all but center of pie to prevent overbrowning.
  8. Remove collar the last 10 minutes of baking if pie isn't a lovely golden brown.
  9. Bake in preheated oven at 350u0b0 for approximately 40 minutes or until the center is set and golden brown.
  10. Serve warm or cold.
