Mandarin Chicken
- 1 chicken, cut up (3 to 4 lb.)
- 2 Tbsp. shortening
- 1/4 c. chopped onion
- 1/3 c. cornstarch
- 3/4 tsp. salt
- 1/4 tsp. ground ginger
- 1/2 c. water
- 1 can Heinz condensed consomm (undiluted)
- 1 small can mandarin oranges
- 1/2 c. currant jelly
- 2 oranges (1 sliced and 1 quartered)
- parsley (for garnish)
- In Dutch oven or deep skillet, brown chicken in shortening. Remove.
- In same skillet, saut onion.
- Remove from heat; stir in cornstarch, salt and ginger.
- Blend in water, consomm, mandarin oranges and jelly.
- Cook while stirring until sauce is clear and thickened.
- Add chicken and quartered orange pieces.
- Cover and simmer 45 minutes or until tender, stirring occasionally.
- Garnish with parsley and orange slices.
- Yield:
- 6 servings.
