Mandarin Chicken

  1. In Dutch oven or deep skillet, brown chicken in shortening. Remove.
  2. In same skillet, saut onion.
  3. Remove from heat; stir in cornstarch, salt and ginger.
  4. Blend in water, consomm, mandarin oranges and jelly.
  5. Cook while stirring until sauce is clear and thickened.
  6. Add chicken and quartered orange pieces.
  7. Cover and simmer 45 minutes or until tender, stirring occasionally.
  8. Garnish with parsley and orange slices.
  9. Yield:
  10. 6 servings.
