Go Bananas!
- 1 cup Whole wheat flour
- 1/2 cup Oat flour
- 1/2 cup Brown sugar
- 1/2 cup Date syrup
- 3 Fully ripe bananas
- 2 Eggs
- 1/2 cup Sunflower seed butter
- 1/4 cup Chopped walnuts
- 1/4 cup Dark Chocolate chips
- 1-1/2 teaspoons Baking soda
- 1 teaspoon Baking powder
- 1/2 teaspoon Cinnamon powder
- 1/2 teaspoon Clove powder
- Peel and mash the bananas in a large bowl. Add all the other ingredients and mix using a hand blender until everything is nicely incorporated, about 2 minutes. Butter and line a 9x12 inch loaf pan or a round cake pan, and pour the mixture into it. Top with additional walnuts, chocolate chips, sunflower seeds and shredded coconut if desired. Bake at 375 degrees for 40-45 minutes or until a skewer inserted in the center comes out clean.
- This banana bread tastes the best the next day as the spices and the sugar in the date syrup have all had a chance to mingle. Enjoy.
