Butterscotch Bundt Cake
- 2 c. flour
- 1/2 c. butter, melted
- 1 c. vanilla yogurt (can use plain)
- 1 Tbsp. vanilla
- 2 tsp. baking powder
- 1/4 tsp. salt
- 1 c. butterscotch flavored chips
- 1 1/2 c. sugar
- 2 eggs, lightly beaten
- Spray Bundt pan with Pam or Baker's Joy.
- Preheat oven to 350u0b0. In medium saucepan over low heat melt butter.
- Remove from heat; stir in sugar until dissolved.
- Add eggs, yogurt and vanilla.
- In medium bowl combine flour, baking powder and salt.
- Add butter mixture to dry ingredients.
- Stir until just moistened.
- Do not overmix!
- Pour 1/2 batter into Bundt pan.
- Sprinkle evenly with butterscotch chips.
- Pour remaining batter in pan and smooth top. Bake at 350u0b0 for 45 minutes or until toothpick comes out clean. Cool on wire rack for 20 minutes.
- Remove from pan and cool completely.
- Sprinkle lightly with powdered sugar.
