Ham Broccoli Luncheon
- 4 rectangular slices ham
- 2 slices Swiss cheese (soft, not dry)
- 1 pkg. frozen broccoli spears
- 1 1/2 tsp. butter
- 1 1/2 tsp. all-purpose flour
- 1/8 tsp. salt
- 1 1/2 tsp. horseradish
- 1 to 2 tsp. mustard (more if desired)
- 1/4 tsp. Worcestershire sauce
- 1/4 tsp. prepared grated onion
- 1 slightly beaten egg yolk
- 1/2 c. pineapple juice
- 1/4 c. milk
- Preheat oven to 350u0b0.
- Steam broccoli until tender; do not allow to change color.
- In shallow pan, lay 2 pieces of ham per person, then 1 slice of Swiss on top.
- Place 2 broccoli spears (flowerets on outside) in the middle; set aside.
- In pan, melt the butter.
- Blend in the flour, salt, horseradish, mustard, Worcestershire sauce and grated onion.
- In a bowl, whip up the egg yolk and pineapple juice.
- On very low flame, slowly blend bowl mixture into pan mixture.
- Add the milk; cook on low heat.
- Pour a little sauce over the broccoli, then roll up and hold with toothpicks.
- Cook for 25 minutes.
- Reheat remaining sauce and serve over rolls.
- Serves 2 people.
