Ham Broccoli Luncheon

  1. Preheat oven to 350u0b0.
  2. Steam broccoli until tender; do not allow to change color.
  3. In shallow pan, lay 2 pieces of ham per person, then 1 slice of Swiss on top.
  4. Place 2 broccoli spears (flowerets on outside) in the middle; set aside.
  5. In pan, melt the butter.
  6. Blend in the flour, salt, horseradish, mustard, Worcestershire sauce and grated onion.
  7. In a bowl, whip up the egg yolk and pineapple juice.
  8. On very low flame, slowly blend bowl mixture into pan mixture.
  9. Add the milk; cook on low heat.
  10. Pour a little sauce over the broccoli, then roll up and hold with toothpicks.
  11. Cook for 25 minutes.
  12. Reheat remaining sauce and serve over rolls.
  13. Serves 2 people.
