Sugarless Apple Pie
- 2 Tbsp. butter or margarine
- 2 Tbsp. cornstarch
- 12 oz. can frozen apple juice concentrate (look for no sugar added), thawed
- 3/4 c. raisins (optional)
- 2 large (1 lb.) Golden Delicious apples
- 2 large (1 lb.) Rome Beauty, Winesap or red baking apples
- 1 Tbsp. flour
- 1 tsp. ground cinnamon
- 1/4 tsp. ground nutmeg
- In a 2-quart saucepan, melt butter or margarine.
- Stir in cornstarch and cook until bubbly.
- Stir in undiluted apple juice concentrate and raisins.
- Heat to a boil and cook until thickened. Remove from heat and cool slightly.
- Peel apples, cut in half and remove cores.
- Cut apples into thin wedges.
- In a cup, mix flour, cinnamon and nutmeg.
- In a large bowl, toss apples with thickened cornstarch mixture, stir apples into raisin mixture until coated with sauce.
- Preheat oven to 400u0b0.
- Fill crust with apple slices, spreading evenly.
- Put on top crust.
- Bake 45 minutes.
- Cover pie loosely with foil and bake 10 to 15 minutes longer or until filling is bubbly and crust is golden.
- Cool pie on rack.
