Chicken And Yellow Rice
- 3 Tbsp. olive oil
- 1 (2 1/2 lb.) chicken
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 large green pepper, chopped
- 1 large tomato, peeled and chopped
- 1 1/2 to 2 c. yellow grain rice
- 2 1/2 c.chicken broth
- 1 bay leaf
- pimento (optional)
- Preheat oven to 350u0b0.
- Heat oil in Dutch oven (frying pan). Add chicken and cook until brown, remove chicken.
- Add onion and garlic and cook until onion is soft.
- Add green pepper and tomato, cook, stirring, until liquid evaporates.
- Add rice and coat with vegetables.
- Add broth, bay leaf and salt; bring to a boil.
- Pour in shallow baking dish.
- Arrange chicken on top with pimento for garnish and cover with aluminum foil.
- Bake for 1 hour.
