Banana Carrot Cake
- 1/2 c. butter
- 3/4 c. light brown sugar
- 2 eggs
- 2 c. all-purpose flour
- 1 tsp. baking soda
- 1/2 tsp. baking powder
- 1/2 tsp. cinnamon
- 1/4 tsp. salt
- 1 c. mashed ripe bananas (3 medium)
- 1 c. grated carrots
- 1/2 c. dark raisins
- confectioners sugar (optional)
- Grease a 9-inch square pan.
- In a large bowl, cream the butter with sugar until light and fluffy.
- Beat in eggs.
- In a small bowl, mix together the flour, baking soda, baking powder, cinnamon and salt.
- Blend flour mixture alternately with mashed bananas, ending with dry ingredients.
- Fold in carrots and raisins.
- Turn into baking pan.
- Bake in a 350u0b0 oven for 45 minutes.
- Cool 10 minutes.
- Turn out of pan; cool completely.
- Sprinkle with confectioners sugar, if desired.
- Makes 16 squares.
