Brownies (Low Carb, Gf)
- 2 eggs
- 2/3 cup granulated sweetener (Swerve)
- 1/2 cup almond flour
- 2/3 cup sugar-free 100% cocao powder (I use Tudor Gold, which is excellent)
- 1 tablespoon baking soda
- 3/8 cup melted butter
- 1 tablespoon black walnut extract
- 1 tablespoon ground cinnamon
- 1 cup cashew butter (or almond butter)
- 1/2 cup black walnut pieces
- 1/2 cup regular walnut pieces
- Combine all of the ingredients except the nuts in a bowl. Mix thoroughly with a hand mixer.
- Combine the nuts and mix well with a spatula. Add the mixture to a well-buttered 8x8 glass baking dish.
- Cook in a pre-heated 350F oven for 20-30 minutes (start checking at 20 minutes).
- Remove and cool in the dish before turning out onto a board and cutting into 2 inch squares.
