No Bake Cheese Cake
- 2 envelopes Knox unflavored gelatine
- 1 c. sugar, divided
- 1/8 tsp. salt
- 2 eggs, separated
- 1 c. milk
- 2 Tbsp. melted butter
- 1 Tbsp. sugar
- 1/2 c. graham cracker crumbs
- 1/4 tsp. cinnamon
- 24 oz. creamed cottage cheese
- 1 Tbsp. lemon juice
- 1 tsp. grated lemon rind
- 1 tsp. vanilla
- 1/4 tsp. nutmeg
- 1 c. heavy cream, whipped
- Mix gelatine, 3/4 cup sugar and salt thoroughly in top of double boiler.
- Beat egg yolks and milk together.
- Add to gelatine. Cook over boiling water, stirring constantly until gelatine is dissolved.
- Remove from heat and stir in lemon rind, juice and vanilla.
- Chill, stirring occasionally, until mixture mounds slightly when dropped from a spoon.
- While mixture is chilling, prepare Crumb Topping.
