Pop-Pop'S Chicken Corn Chowder
- 1/4 c. chopped onion
- 1/3 c. butter or margarine
- 1/4 c. flour
- 2 tsp. chicken bouillon granules
- 3 c. milk or half and half
- 1 c. cooked, cubed potatoes
- 2 c. corn, drained
- 1 c. cooked diced chicken
- 1 Tbsp. chopped green pepper
- 1 Tbsp. chopped red pepper
- 1 bay leaf
- 1/4 tsp. pepper
- 3 to 4 hard-boiled eggs, sliced
- Melt butter in saucepan.
- Saute onion until tender (5 minutes).
- Blend in flour and bouillon.
- Cook, stirring constantly, until mixture is smooth and bubbly.
- Stir in milk; heat to boiling, then simmer (avoid a hard boil), stirring until mixture thickens.
- Add potatoes, corn, chicken, green and red peppers and bay leaf.
- Stir in hard-boiled eggs.
- Makes approximately 6 servings.
- Very rich; serve with green salad.
