Mexican Manicotti(This Is One Of Pastor Kevin'S Favorite Dishes.)
- 1 lb. lean ground beef or ground turkey
- 2 c. refried beans
- 2 tsp. oregano
- 1 tsp. cumin
- 14 to 16 manicotti shells (1 box)
- 2 1/2 c. water
- 1 (16 oz.) picante or taco sauce
- 16 oz. sour cream
- 1/2 c. finely chopped green onions
- 1/2 c. sliced olives
- 2 c. shredded Monterey Jack cheese
- Combine uncooked meat, refried beans, oregano and cumin.
- Mix well.
- Fill uncooked shells with meat mixture.
- Arrange in a baking dish.
- Combine water and picante sauce and pour over shells.
- Cover your dish and bake at 350u0b0 for 1 hour and 15 minutes to 1 hour and 30 minutes until noodles are tender.
- About midpoint of your baking time, very carefully turn the noodles over.
- Combine sour cream, green onions and olives.
- Spread over noodles.
- Take note which direction you placed your noodles before adding sour cream mixture so you will know how to take them out.
- Finally, add cheese for the final layer.
- Place back in oven long enough to melt cheese.
