Golden Oyster Stew
- 1/2 c. chopped onion
- 1/2 c. sliced celery
- 2 Tbsp. margarine
- 2 c. sliced mushrooms
- 2 Tbsp. flour
- 2 c. milk
- 1 c. shredded sharp Cheddar cheese (4 oz.)
- 1 can cream of potato soup
- 1 (2 oz.) jar diced pimento (undrained)
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 1/4 tsp. hot sauce
- 1 (12 oz.) standard oysters (undrained)
- Saute onion and celery in margarine until tender.
- Add mushrooms and cook 2 minutes, stirring constantly.
- Gradually add milk; cook over medium heat, stirring frequently until mixture is thickened and bubbly.
- Stir in cheese, pimento and seasonings. Continue to cook and stir often until cheese melts and mixture is thoroughly heated.
- Add oysters and liquid.
- Reduce heat and simmer 5 to 8 minutes or until edge of oysters curl.
- Yields 6 1/2 cups.
