Menage A Trois With Yogurt Curry Dressing

  1. Make curry powder by mixing the first 6 ingredients. The cumin powder has to be made from dry rosted whole cumin. This is very important because the regular cumin powder will give a raw taste to the salad.
  2. Add the curry powder to the strained yogurt and maple syrup and mix thoroughly.
  3. Core the apple and cut into 1/2 inch dice. Take 1 and 3/4 cups of diced apples and add to the dressing and mix gently with your hand and get the dressing over all the apple pieces. Check for salt and add to your taste.
  4. Add the raisins and mix.
  5. Toast the walnut halves and add to the salad after it has come to room temp.
  6. Serve on Boston lettuce cups, if using.
