The Tomato Sauce For Any Occasion

  1. On low/medium heat put medium/large sauce pan with olive oil, let heat up.
  2. While olive oil is heating, dice onion into small pieces
  3. Peel and crush garlic with the flat side of knife (lightly)
  4. Put onion and garlic in sauce pan with olive oil, until onion is translucent (adjust heat to avoid burning).
  5. Wash tomatoes thoroughly, and barely cut tops off tomatoes.
  6. Place tomatoes in the pan with the olive oil, onion and garlic.
  7. Turn up heat immediately after placing tomatoes in pan to medium/high, and cook for 5 minutes.
  8. Stir occasionally and reapply lid until tomatoes start breaking down, help process with stirring spoon.
  9. Rinse thoroughly parsley and basil.
  10. Finely chop parsley and place in pan.
  11. Chop basil and put in pan.
  12. Stir all together.
  13. Tomatoes should be broken down with the help of spoon.
  14. Add salt and pepper
  15. Add 1tbsp ghee/unsalted butter.
  16. Hand help immersion blender (if you don't have one take large pieces into blender, food processor, etc.)
  17. Taste, add any extra salt and pepper if needed.
  18. Put lid on for 5 minutes.
  19. Serve over favorite pasta.
