15 Minute Super Rich Chocolate Wafer Cookies
- 1/2 cup salted butter, room temperature
- 1/3 cup granulated sugar
- 1 egg
- 1/4 cup dark cocoa powder
- 1/4 cup flour
- 1 teaspoon vanilla bean paste
- Preheat the oven to 400 degrees. rnrnCombine butter and sugar in the bowl of a food processor. Add egg, cocoa, flour, and vanilla bean paste. rnProcess until combined, remove to bowl and chill for 20 minutes in refrigerator.
- Drop by teaspoons onto a buttered sheet pan or pan lined with silicone baking mat.rnBake in the middle rack of the oven, 3-5 minutes. The middle of the cookies will lose their sheen they are baked through. rn*Watch very closely as the edges burn very easily. Reduce oven to 375 degrees if the edges begin to burn.rnrnAllow cookies to cool slightly, then remove from baking sheet and cool on a rack.
- COOK'S NOTES: The cookies can be prepared with regular cocoa powder. The cookies spread so keep to a teaspoon when dropping on baking pan, and 1/2 sheet pan is prefect. I only bake one batch at a time, the cookies need to be watched as they bake very quickly. The make a great sandwich and may be filled with whipped cream and placed in the freezer for a few minutes to firm up.
