No-Fat Chicken Salad Oriental
- 3/4 c. cooked, boned, skinless chicken breast meat, diced
- 1 (10 1/2 oz.) can mandarin oranges canned in juice, drained
- 1/2 c. sliced water chestnuts
- 4 Tbsp. chopped green onion
- 1/4 c. chopped red pepper
- 1/2 c. plain nonfat yogurt or yogurt cheese
- 1/2 c. mashed banana
- 3 Tbsp. honey
- 1 Tbsp. lemon juice
- 2 tsp. apple cider vinegar
- 1 tsp. finely chopped ginger
- dash of white pepper (optional)
- 3 c. chopped romaine lettuce or dark leafy greens of choice
- In mixing bowl, combine chicken, 1/2 cup orange segments, water chestnuts, 2 tablespoons green onion and red pepper.
- Next, combine yogurt, banana, honey, lemon juice, vinegar, ginger and white pepper in blender.
- Puree until smooth.
- Pour over chicken; mix well and chill.
