Family Favorite Carrot Cake

  1. Preheat oven to 350u0b0.
  2. Cover raisins with boiling water; let stand 5 minutes.
  3. Drain.
  4. Combine flour, baking powder, cinnamon, baking soda and salt.
  5. In large bowl, beat sugar, Crisco and eggs until fluffy.
  6. Add flour mixture and milk; beat on medium speed 2 minutes.
  7. Stir in carrots, raisins and walnuts.
  8. Spread into greased and floured 9 x 13 x 2-inch baking pan or two 9-inch round layer cake pans.
  9. Bake 30 to 35 minutes or until wooden toothpick comes out clean.
  10. Cool completely.
  11. Frost with Lemon Cream Cheese frosting.
  12. Store covered in refrigerator.
