Porcelain Thumbprints
- 1/4 c. margarine
- 1/3 c. sugar
- 1 egg white
- 1/2 tsp. vanilla extract
- 1 1/3 c. sifted cake flour
- vegetable cooking spray
- 1/2 c. powdered sugar
- 1 Tbsp. unsweetened cocoa
- 2 Tbsp. water
- Cream margarine in small bowl.
- Add 1/2 cup sugar, beating at medium speed with mixer until light and fluffy.
- Add egg white and vanilla; beat well.
- Gradually add flour to mixture; stirring until blended (dough will be stiff).
- Wrap dough in heavy plastic wrap and freeze 10 minutes.
- Shape dough into 1-inch balls, place 2 inches apart on cookie sheet.
- Press thumb into each.
- Bake at 375u0b0 for 10 minutes.
- Remove and cool.
- Combine powdered sugar, cocoa and water; stir well.
- Spoon 1/4 teaspoon into each cookie center. Yields 2 dozen.
