Coffee Cake
- 1/2 c. cooking oil
- 3/4 c. sugar
- 1 tsp. vanilla flavoring
- 3 eggs
- 1/2 pt. sour cream or 1/2 c. canned milk
- 2 c. sifted flour
- 1 tsp. baking powder
- 1 tsp. baking soda
- 6 Tbsp. butter or margarine
- 1 c. packed brown sugar
- 1 tsp. cinnamon
- 1 c. pecans
- Cream oil, sugar and vanilla thoroughly.
- Add eggs, 1 at a time, beating well.
- Mix flour, baking powder and soda together; add to creamed mixture alternating with sour cream.
- Blend well; spread half of batter in 10-inch tube pan that has been greased. Cream butter, brown sugar and cinnamon together; add nuts.
- Mix well.
- Spread half of mixture in half of cake.
- Cover remaining batter and then put remaining mixture with nuts on top.
