Turkey Sausage Stuffed Hot Peppers
- 1 lb. ground turkey, seasoned with country sausage or 1 lb. ready made turkey sausage
- 2 c. grated Monterey Jack cheese, divided
- 2 Tbsp. chili powder
- 1/2 c. diced onion
- 1 c. flour
- 4 eggs, beaten
- 12 hot banana peppers
- 1 (16 oz.) jar salsa
- Combine sausage, 1 cup cheese, chili powder and onion; mix well.
- Make a slit in each pepper from end to end; remove veins and seeds.
- Fill peppers with sausage mixture and press slit together. Dip peppers in egg, then in flour and egg again.
- Place on baking sheet and bake in preheated 400u0b0 oven for about 25 minutes until sausage is done.
- Transfer peppers to baking dish and top with salsa, then sprinkle with remaining cheese.
- Return to oven for 5 minutes or until cheese melts.
