Lebkuchen(German Cookies)
- 2/3 c. honey
- 1 c. brown sugar
- 2 Tbsp. water
- 2 Tbsp. butter
- 3 1/2 c. flour
- 1 tsp. cinnamon
- 1/2 tsp. candied orange peel
- 1/2 tsp. each: baking soda, salt, ginger and nutmeg
- 1 c. slivered, blanched almonds
- 1 Tbsp. grated orange peel
- Mix honey, brown sugar and water in pan.
- Add butter and boil. Cool.
- Mix flour, baking soda, salt and spices in bowl.
- Stir in almonds, candied and grated orange peel, then honey mixture until well blended.
- Divide dough in half.
- Roll half of dough on floured surface to a 12 x 9-inch rectangle.
- Make 4 lengthwise and 9 crosswise cuts.
- Place cut rectangles 1/2 inch apart on greased cookie sheets.
- Bake at 400u0b0 for 10 minutes, until pale brown. Remove to cool.
- Brush glaze on tops of cookies.
- Decorate with almonds and halved candied cherries.
- Let stand 1 hour until glaze sets.
