Chocolate Banana Cookies
- 8 tablespoons butter at room temperature
- 4 tablespoons light brown sugar
- 3 tablespoons granulated sugar
- 1 egg
- 1/2 teaspoon vanilla
- 1/4 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup dried banana chips ground up like flour
- 1/2 cup all purpose flour
- 2 tablespoons all purpose flour
- 1 cup chocolate chips
- Preheat oven to 350F degrees
- In a large bowl, cream butter and sugars. Beat in egg and vanilla.
- In a separate bowl mix baking powder, baking soda, flour, banana flour, flour, and salt. Once combined, add to wet ingredients.
- When a dough has formed, stir in chocolate chips.
- Spoon mixture onto a baking sheet lined with parchment paper and bake for 8-12 minutes, or until cooked through.
