Green Chili Enchiladas
- 2 cans cream of chicken soup
- 1 can evaporated milk
- 2 small cans green chilies, chopped
- 1 smal can pimentos (optional)
- 2 lb. Velveeta, cut in cubes
- 2 lb. hamburger or ground turkey
- 1 large chopped onion
- salt and pepper
- 1/2 c. jalapeno juice (optional)
- corn tortillas
- In saucepan melt soup, evaporated milk, chilies, pimentos and Velveeta.
- Brown hamburger, add onion, salt, pepper and jalapeno juice.
- Cover bottom of 2 (9 x 13-inch) pans with corn tortillas. Cover with meat mixture (1/2 on each).
- Cover with another layer of tortillas.
- Then cover with cheese sauce (1/2 on each).
- Top with grated Cheddar cheese.
- Bake at 400u0b0 about 15 to 20 minutes until cheese sauce starts to bubble.
