Peanut Butter Oat Nut Cookies (Lc)
- 1.5 stick butter (softened)
- 1 cup Swerve brown sugar substitute
- 2 eggs, beaten
- 1 cup cashew butter (with oil)
- 1 tablespoon vanilla
- 2 cups peanut flour
- 1 cup rolled oats
- 2 teaspoons baking powder
- 1 cup sugar-free chocolate chips or chopped 100% chocolate bar
- 1/2 cup chopped pecans
- 1/2 cup chopped walnuts
- Blend Swerve with the softened butter, then add in the eggs, the cashew better, and the vanilla.
- Add and blend in the baking powder, then the peanut flour and oats.
- Add and blend in the chocolate chips and nuts.
- Scoop in 1/4 cup portions onto a parchment lined tray, and lightly press with a fork.
- Bake for 10 minutes at 375F. Cool on a rack.
