Sweet And Sour Beef
- 6 to 8 oz. beef, cut into bite-size pieces
- 1/2 c. brown sugar
- 1/4 c. cornstarch
- 1/2 c. cider vinegar
- 2 tsp. soy sauce
- 1 (20 oz.) can pineapple chunks (juice packed)
- 2 to 3 carrots, peeled and thinly sliced
- 1 green pepper, cut into bite-sized chunks
- 1 tomato (optional), cut into bite-sized chunks
- Brown meat in skillet.
- Remove and set aside.
- Combine brown sugar and cornstarch in skillet.
- Add vinegar, soy sauce and juice from canned pineapple.
- Cook, stirring constantly until thickened. Add pineapple chunks and meat.
- Simmer until 5 minutes before serving time.
- If necessary, add water, pineapple juice or apple juice to thin the sauce.
- Five minutes before serving time, stir in carrots and green pepper.
