Quick Oats With Peas And Eggs

  1. Heat a pan and dry roast the quick oats on medium heat with constant stirring. Once the oats are light brown and toasted transfer them to a bowl.
  2. In the same pan, add a tsp of olive oil and fry the cumin seeds, ginger and garlic for about 30 seconds.
  3. Then add the cup of green peas or any other vegetable like potatoes or carrots.
  4. Saute them for a minute and then add the toasted oats. Fry them all together for a minute.
  5. Crack the two eggs straight in to the pan and add the spices - coriander powder, chili powder,black pepper and salt.
  6. Stir the oats and eggs together. At this point it does look a little mushy, once the eggs cook the whole thing comes together. Keep stirring the mixture until the eggs are cooked, this take a minute or two.
  7. Once the eggs are cooked, sprinkle about 2 tsp of water, reduce the heat and cover the pan. Let them cook for about 2-3 minutes.
  8. The oats will cook more from the steam and reducing the heat will prevent them from getting too mushy.
