Hot Oyster Surprise

  1. Shell and clean oysters; put in pot with 1 cup water, lemon juice and half of the salt; simmer about 5 minutes.
  2. Soak the onions in 1 1/2 cups of boiling water with 1/2 of the salt for about 5 minutes.
  3. Drain well and saute in oil about 3 minutes. Then add to oysters; add vinegar, allspice, pepper, garlic, jalapeno peppers and 1 tablespoon jalapeno juice.
  4. Cover and let stand 24 hours.
  5. Serve with crackers and Tabasco sauce or other hot red sauce.
