Salisbury Venison Steak
- 1 1/2 lb. ground venison
- 1/2 lb. lean ground pork
- 1 egg, beaten
- 1/2 c. milk
- 1/2 c. plain bread crumbs
- 1/2 c. chopped onion
- 2 Tbsp. dried parsley
- 2 tsp. salt
- 1 tsp. garlic powder
- 1/2 tsp. pepper
- flour
- 1/3 c. plus 1 Tbsp. oil
- 1 large onion, sliced
- 2 (4 1/2 oz.) jars sliced mushrooms, drained
- 2 Tbsp. flour
- 1 (14 1/2 oz.) can beef broth
- In a large bowl, combine first 10 ingredients
- Mix well. Shape into 10 patties; thoroughly coat each patty with flour. Heat 1/3 cup oil in skillet over medium heat.
- Add patties and brown on both sides.
- Transfer patties to a greased roasting pan. Place onion and mushrooms over meat.
