Chicken Fajitas
- 1/2 c. oil
- 1/4 c. red wine vinegar
- 1/3 c. lime juice
- 1/4 c. finely chopped onion
- 2 cloves garlic, minced
- 1 tsp. sugar
- 1 tsp. dried oregano
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 1/2 tsp. cumin
- 3 whole chicken breasts, halved, skinned and boned
- flour tortillas
- chopped tomatoes
- chopped onions
- sliced avocado
- salsa
- shredded Monterey Jack cheese
- Combine first 10 ingredients; mix well.
- (Can use a blender or food processor.)
- Coat chicken with marinade.
- Cover and put in refrigerator for 4 or more hours, stirring occasionally.
- Drain chicken; grill on grill 8 to 10 minutes per side or until cooked through.
- (In winter broil under broiler.)
- Slice in thin slices. Wrap tortilla in foil and warm through.
- Place chicken and some garnishes on tortillas.
- Roll up and enjoy.
