M.N.'S Favorite Soup
- 4 oz. diced bacon
- 4 oz. sliced kielbasa
- 1 large chopped onion
- 2 large chopped carrots
- 3 ribs chopped celery
- 6 c. water
- 1 large can whole tomatoes, cut into pieces
- 1/2 c. dried navy beans, soaked
- 2 c. tomato juice
- 1 bay leaf
- 3/4 tsp. salt
- 1/2 tsp. pepper
- 2 Tbsp. dried basil
- 1 Tbsp. chopped parsley
- 1 Tbsp. marjoram
- 1 Tbsp. Worcestershire sauce
- 2 tsp. sugar
- 2 tsp. Dijon mustard
- In large kettle, saute bacon until browned; drain fat.
- Add sausage, onion, carrot and celery.
- Saute until onion is tender. Add water, tomatoes and beans.
- Bring to a boil.
- Reduce heat, cover and simmer 45 minutes until beans are almost tender.
- Stir in remaining ingredients.
- Simmer, covered until done.
- Discard bay leaf.
